Almost impossible to find in the USA, and certainly not at this price, this limited edition olive oil is the very first from the Umbrian olive harvest. Referred to as "Novello" (brand new oil) and available for only a short period of time, this oil is the freshest fruitiest obtainable. Unlike other olive oil pressings that continue through late December , and where the oil goes into immense stainless steel containers to naturally decant and allow for the olive sediment to settle to the bottom, the olives for "Novello" are pressed and then immediately bottled. The result is a thick, cloudy and full bodied olive oil with an intense green color. Its bold intense bouquet of unripened fruit leaves peppery sensations on the palette. This is an unfiltered finishing oil in the purest sense used for bruschetta, salads, on dips, soups, pasta dishes, grilled and roasted meats, poultry or shellfish. 750 ml (25.4 oz)
