Amazing Roasted Tomatoes
This is one of those recipes that happened by chance. I had marinated some plum tomatoes in olive oil & balsamic to offer as samples at my Green Market stand and I had some leftovers that I couldn’t possibly throw out… This is absolutely amazing as a bruschetta topping or tossed into cold or warm pasta.
- 1 lb plum tomatoes
- 1/2 cup of Trampolini Black Label EVOO
- 1/4 cup our 12 Year Balsamic Vinegar
- 1 teas oregano
- Salt & fresh ground pepper to taste
Heat the oven to 400 degrees. Quarter the tomatoes lengthwise, place into a bowl with the EVOO and balsamic. Toss together with the oregano, salt and pepper and then transfer to a ceramic baking dish (do not use a metal pan.) Bake for about 1 hour. Shut off the heat in the oven and let set for 20 minutes. Remove and let the tomatoes cool to room temperature to allow the flavors to truly develop.
